Beyond The Icing was established in 2016 by me, Catherine, a passionate home baker & 1950's rockabilly girl.  I have been baking since I was tall enough to stand on a stool to reach the mixer, that's almost 50 years! 

​

I had been creating cakes for family & friends for too many years to count, all with amazing feedback so in 2015 I decided to ditch a well paid, full time job in finance and start Beyond The Icing.

During the Covid-19 lockdowns, I spent many hours perfecting my flower making & modelling techniques.  ​​

 

I love meeting new clients and working with them to create their perfect cake.  I never under-estimate the joy that a beautiful cake can bring & being part of that journey is amazing.

​​​

When I'm not designing or creating beautiful cakes, I like to dance 1950's rock & roll & rockabilly, ballroom & latin.

In 2024, I entered the Cake International competition at the NEC for the first time.  I entered the head judges wildcard - a wearable masquerade mask category.  Everything visible had to be made from an edible medium, including the inside of the mask.  I was delighted to be awarded silver and I was ranked third in the category.

In 2025, I entered the Cake International competition again, this time with three entries.  I was awarded a bronze and a silver for my decorative exhibit entries and a silver for my miniature room. This was required to fit within a 6" cube.  If you would like to know more, please see my blog.

In 2022 I joined the Cakeflix 2022 Cake International Display team.  We all created cakes with a Christmas theme for display at the NEC in November.  My fairy stands at 20 inches (51 cm) tall and driving her across country to Birmingham was interesting!

In 2023, having not had enough stress in 2022, I again created a piece for display at Cake International.  This year, the theme was 'Teddy Bears Getting Hitched'.  I decided to create the whole church wedding. The church stands at 26 inches (66 cm) tall but the tallest teddy bear is just 2.5 inches (6 cm) tall.
